Speaking of the class I didn't even post about it! My mom and I met out in Mesa on Wednesday evening for a class called Easy Peasy.... a class on making quick pages. We had a blast and made 6 pages that night! I will post pictures of the pages later this weekend... I hope.

Working In Vegas
I just came back from a quick trip to Vegas. I drove up yesterday, did some audits, and drove home today. While I was there, in my spare time, I decided to bet a little. I played craps a couple of times and broke even. Last night the Suns were playing so I decided to put some action on it. I put a $25 bet on the Suns to win, and they had to win by 9 points for me to cash in, and they did! I got my $25 back, and also took $22 of their money. They explained that if I bet on two teams, then I can win more. So...I did. The Lakers were playing and had to win by 5. So I had the second bet for the Suns to win and for the Lakers to win. I got my $10 back on the bet, and I took $26 of their money. So basically I was $48 ahead. That's not bad for my spare time when I'm on a business trip.
Amanda likes it when I bring back the Hotel's shampoo and soap. She collects it, and it's cheap. Free is pretty cheap!

Yummy Recipe
So I got a bunch of Zucchini from my MIL and haven't really cooked with them before. So I went online and found this recipe-- it came out really good! I would recommend using only 1/2 a small onion though. Anyway, my parents and I enjoyed it ! (right you thought Kenny would try this-no way there are veggies in there)
Corn and Zucchini Melody
Prep Time: 5 Minutes
Cook Time: 25 Minutes
Ready In: 30 Minutes
Servings: 5
"Zucchini, corn, and onions combined with chopped bacon and cheese. A quick and easy way to use some fresh veggies from your garden!"
Ingredients:
4 slices bacon
2 cups chopped zucchini
1 1/2 cups fresh corn kernels
1 small onion, chopped
1 pinch pepper
1/4 cup shredded Monterey Jack cheese
Directions:
1. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Reserve 1 tablespoon of drippings. Drain bacon, chop, and set aside.
2.Heat the bacon drippings in the skillet over medium heat. Saute the zucchini, corn, and onion until tender but still crisp, about 10 minutes. Season with pepper. Spoon vegetables into a bowl, and sprinkle with chopped bacon and shredded cheese.

Happy Valentine's Day!
My Valentine's started Friday morning at work when I received these beautiful roses!! There is something about being one of the few women in a large office to get flowers... really makes you feel special.
For Kenny Valentines started on Feb 1st. Since we were dating I have done a little something each day from the 1st-14th for him. Just little things... a note and candy, some muffins etc.
Our Valentines was really nice we just stayed home. Kenny's mom came over to visit and took us out for lunch. She also brought Kenny and I some Valentines- I got a yummy candle and Kenny got the cure dog that sings. I took a picture of all of our wonderful Valentines-
Tonight for dinner we decided the resturants would be super busy so we ate in...I made this yummy from cooks.com. I am not much of a cook so when something comes out this good I do have to toot my own horn... although Kenny said it was really good too! After dinner we watch a movie called FireProof- it was really good.
CORNISH GAME HENS WITH CHEESY RICE STUFFING

1/4 c. (1/2 stick) butter
1/3 c. regular rice
2 tbsp. diced celery
2 tbsp. finely chopped onion
1 c. chicken broth
1 (2 oz.) can mushrooms, drained & chopped (opt.)
1 c. shredded cheddar cheese
2 (1 lb.) Cornish game hens
Salt & pepper
Melted butter
In a saucepan melt butter; add rice, celery and onion. Cook 5 to 10 minutes, stirring frequently. Add chicken broth and bring mixture to a boil. Cover and simmer on low heat about 20 minutes or liquid is absorbed and rice is fluffy. Stir in mushrooms; cool. Toss cheese lightly with cooled mixture. Season birds inside with salt and pepper. Stuff birds with rice mixture.
Place on rack, breast side up in shallow baking pan. Baste with butter. Loosely cover with foil. Roast in preheated 400 degree oven for 30 minutes. Remove foil; continue roasting for 45 minutes until done. Baste with butter occasionally during last 45 minutes. Additional stuffing may be placed in small baking dish, covered and baked during last 45 minutes of roasting. Then cover removed last 15 minutes.

Cool
Apparently I say "cool" A LOT, because after spending most of the weekend together my little 2 year old Nephew picked up this favorite word of mine... We were looking at the ducks at the park and he points and says "cooooool" It was so adorable! And I have to say if he is going to pick up a 4 letter word from Aunt Amanda... I am glad it is COOL --
